Brunch - Zucchini, Mushroom & Egg Scramble

Today I had scrambled eggs (organic) with some zucchini (from farmers market), mushrooms (Trader Joe's) and shallots. It was super yummy.
Sauteed lightly (to retain semi-rawness of the veggies) with Tropical Traditions Virgin Coconut Oil
In depth review and giveaway to come. You can taste the unique flavor of coconut with tis oil a big difference from extra virgin olive oil.

Finished  off with some vine ripen tomatoes and a glass of natural orange juice. It was very filling.
